Making of Pineapple Tarts 2007
This year, mum not making her tasty pineapple tarts.. So i've decided to make myself. After going through my mum recipes, i've came up with my very own improved version. The ingredients & steps as follow.
Ingredients:
Sifted plain flour 800g
Butter 450g
Egg yoke x 6 (4 for mixing, 2 for glazing)
Egg whte x 2
¼ tsp vanilla essence
Pineapple jam 1Kg (divide into small part and form into balls)
Method:
1. Mix 450g Butter, 4 Egg yokes & 2 Egg white till creamy.
2. Add in ¼ tsp vanilla essence and mix well.
3. Fold in 800g Shifted plain flour and mix to form a dough.
4. Leave aside for 20 mins.
5. Use the pastry cuter to crop out the casing.
6. Roll the pineapple jam into balls & put it on the casing.
7. Glaze the casing side with beaten egg yolk.
8. Bake in a pre-heated oven at 180ÂșC for 20 mins till golden browm.
9. After removing from oven, let it cool completely before storing.
